Cánh Gà Chiên Nước Mắm Thi Nguyen


Here is the recipe:
1-2 lbs Chicken wings defrosted and washed 3 times.
I cup cornstarch
1 tsp salt
1 tbsp black pepper
1 tbsp paprika or cayenne power
1 tbsp garlic powder

Season wings with salt and pepper and then dredge wings in mixture of cornstarch and garlic powder & paprika until covered lightly. Cook wings in air fryer for 400 degrees F. for 13 minutes. When done, check chicken. If you see any spots on the chicken where the flour is still white, spray area with cooking spray and flip wings. Cook for another 13 minutes at 400 degrees F. Remove from air fryer. Set aside to cool.

Nuoc mam:
Juice from 3 limes
1/2 part water
1/4 part fish sauce
1/4 part white sugar
2 cloves minced garlic
1 tbsp sambal chili sauce or sriracha to taste

Mix ingredients well until sauce is formed on low heat in a sauce pan until slightly thickened enough to coat the back of a spoon.

In a mixing bowl, quickly dip cooked wings in fish sauce mixture and serve immediately. Enjoy!

AIR FRYER” VIETNAMESE STYLE WINGS

16 pieces (1st and 2nd sections) of the chicken wings or use whole wings
cooking oil
Garlic Butter Sauce (Món Gà Chiên Bơ) (Sufficient for 8 pieces of wings or more)

2-3 tbsp of unsalted butter
1 tbsp of minced garlic
lime juice, salt, pepper for dipping

Fish Sauce Style (Cánh Gà Chiên Nước Mắm) (Sufficient for 8 pieces of wings or more)

3 tbsp of good fish sauce such as Red Boat
3 tbsp of water
3 tbsp of sugar
1 tbsp of lime juice
1 tbsp of minced garlic
minced chili (optional)

Directions

Wash wings well, pat dry. Place in Air Fryer in a single layer and not too tight together, brush lightly with some cooking oil on top. Set Air Fryer Temperature to about 375 F (190°C) for 18-20 minutes. *Please note cooking time may varies depending on your Air Fryer. Use this time and setting as a guide.
When it’s about 8 minutes remaining, flip the wings and lightly brush this side with some cooking oil. Continue cooking until wings are lightly golden brown to your liking.(Khi còn khoảng 8 phút, lật cánh và quét nhẹ mặt này với một ít dầu ăn. Prepare the sauce:
For Garlic Butter Sauce: Melt butter in a pan and add minced garlic until fragrance, turn off heat immediately. Please note to prepare this sauce right before the wings are done frying. Don’t make this too far in advance otherwise the butter will thicken again.
For Fish Sauce: Combined all ingredients above and adjust to your taste as needed.
Once the wings are done frying, remove from Air Fryer and immediately toss wings evenly into your sauce. Remove and add to a serving plate, drizzle the garlic sauce on top.
For Garlic Butter Wings, serve with a side of lime juice, salt and pepper sauce (muoi tieu chanh). For Fish Sauce Wings, serve with the remainder fish sauce if you prefer.
